How this is calculated

A hertz is one cycle per second, so anything periodic can be expressed in it. Revolutions per minute is the same quantity divided by sixty, which is why mains frequency and motor speed line up so neatly: a two-pole motor on a 50 Hz supply turns at 3,000 rpm, and on 60 Hz at 3,600.
